I’m sure I sound like a broken record every time I post a good recipe. “It’s sooo good.” “Try it now.” “It’s da bomb!”
But then, of course I’m going to go on and on about how much I love it. If I’m posting it, it’s because it was awesome. Why on earth would I post a junky, gross-tasting recipe for you guys? I wouldn’t. Although I’ve made a bunch of those gross recipes through the years, I just keep those to myself and only share the gems! So when you hear me go off about how totally awesome a recipe is, know that it’s been tested and loved by me {and/or my family}.
Kinda like this rice pudding recipe that’s awesome.
1/2 cup basmati rice
1 can light coconut milk
1 cup milk
1/2 cup water
1/2 teaspoon vanilla extract
1/4 teaspoon almond extract
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1/2 cup raisins
1/4 cup almonds, chopped and toasted
1/4 cup shredded coconut
1/4 cup agave nectar, divided
Directions
Add rice, coconut milk, milk, water, vanilla extract, almond extract, cinnamon, and nutmeg to the slow cooker. Cook on low for 4 hours or high for 2 hours. Mix in raisins, almonds & coconut.
Serve with a drizzle of agave nectar and a few coconut flakes on top.
