Yesterday was a GREAT day!

Just look at my new white cupboard!!! Isn’t is gorgeous. I nearly cried when I walked into the kitchen and spied Cameron {the now, 9 fingered carpenter} installing part of the crown mounding.

And the doors! I have doors… no knobs yet… but with the doors installed it’s starting to look like a real kitchen now. And yes, that piece of stained trim above the kitchen sink window will be painted white. Soon. By me. I was suppose to have it painted before it was installed, but you know me, I’m a total slacker. 😉

What do you think of the brushed satin nickle knobs and pulls I picked out?

While the Cameron and John Voight were working on the cabinets, I pretty much stayed out of the way by painting the HH’s new office space, running errands and picking up trash.

Oh! And the laundry room cupboards were delivered yesterday too. Yee-Haw! The replacement cupboard the goes above the refrigerator was delivered too, but it was the wrong size {again}. But let’s not talk about that. Nope. We’re staying positive today. 😉

I don’t know about you, but sometimes I get totally discouraged at the whole idea of technology taking over our daily lives–pulling us away from the whole cycle of life happening out of doors, so when I found out about the Urban Cultivator on Treehugger, I kind of felt like technology was redeeming itself a bit. I mean, if we are going to have appliances, why not have ones that allow us to become a little more independent with our food sources?

The Urban Cultivator is basically an indoor growing system–designed to provide the right amount of light, water, etc. so that you can grown your own greens year round right in your kitchen. I know, you can do this in little pots near the window, but this totally amps up the process. I like the idea that it fits under the counter–like a little mini-fridge. The whole idea is in support of a zero mile diet. You grow it, you harvest it, you eat it. The energy used to keep the appliance going is far less than the energy used to truck your herbs and greens to your grocery store. The one drawback is that they cost a small fortune {about $2500–yikes!}.

Maybe they will be like flat screen t.v.’s used to seem–totally out of reach, and then one day, bam! you can pick it up on a Black Friday deal at Walmart for a steal, and the next thing you know, everyone has one?

Well hello there, can you believe it’s already Thursday? I feel like this week is just zipping on by, although that’s probably because I feel like I’m actually getting a bunch of stuff done. HA!

Yesterday I scored a bunch of bulbs from the Home Depot for half off… if you need bulbs, be sure and load up before all the good stuff is gone. On the agenda for today… Cameron and John Voight will be here working on the trim, I plan on getting some more painting done and maybe if I’m lucky get some of those bulbs planted. We’ll see.

Pumpkin Gooey Butter Cake

We’ve made this pumpkin gooey butter cake for Thanksgiving dessert for as long as I can remember. Why mess with perfection, right? And you pretty much know with gooey in the title of the recipe, it’s going to be freakin fantastic. And oh it is.

Just know that you might have to cut back on Thanksgiving seconds {or thirds} to save room for this, otherwise you might eat so much you’ll hurt. Not that I would know from experience or anything. But man-oh-man it is awesome. It kicks pumpkin pie’s butt. Yep, I said it.

Ingredients For the cake:
1 yellow cake mix
1 egg
1 stick butter, melted

Ingredients For the filling:
1 {8 oz} package cream cheese, softened
1 {15 oz} can pumpkin
3 eggs
1 teaspoon vanilla
1 stick butter, melted
3 cups powdered sugar
1 teaspoon cinnamon
1/2 teaspoon nutmeg

Directions

Preheat oven to 350 F.

In a stand mixer, combine the cake mix, egg, and butter and mix well. Pour mixture into the bottom of a lightly greased 13×9 baking dish. Set aside.

In a separate bowl, beat the cream cheese and pumpkin together until smooth. Slowly add in the eggs, vanilla, and butter, and beat together until combined. Carefully add in the powdered sugar, cinnamon, nutmeg, and mix well. Spread pumpkin mixture over cake batter and bake for 45 minutes. Center will still be a little bit gooey, hence the name.

Serve with lots of whipped cream.
