Sometimes looks can be deceiving. It looks like a waffle, but it sure as Sam doesn’t taste like a normal waffle. It’s probably the coolest way to serve hash browns I’ve ever seen. Your kids will probably think you’re the most inventive breakfast maker ever. Because when you cook these bad boys up, you are!
1 pound potatoes, shredded
2 tablespoons vegetable oil
1 clove garlic, minced
1/2 teaspoon salt
1/4 teaspoon ground black pepper
2 eggs
Preheat waffle iron and then coat the cooking surface with butter.
In a large bowl, cover potatoes with enough cold water to cover them, and then let them soak for 3-5 minutes. Drain and rinse them, and then press them between paper towels to squeeze out water.
Add oil, garlic, salt and pepper to the bowl and toss with potatoes until evenly covered. Lightly beat the eggs and then pour them over the potato mixture.
Carefully spread half the potato mixture into the waffle iron. Cook 6-8 minutes or until golden brown. Repeat a second time. Serve hot and enjoy!
