The Girl and I have enjoyed taking a little break from the documentaries lately in exchange for something a little more light-hearted. So, tonight, we are watching 13 Going on 30. If you haven’t seen it, I know it seems cheesy, but I recommend it. It is such a cute show about a 13 year old girl who makes a wish on her 13th birthday to be grown up {kind of like the movie Big with Tom Hanks, only this one is for the ladies} and of course, gets her wish. It’s a really endearing movie about the awkward and funny aspects of growing up.

Vegan Recipe – Chocolate Coconut Ice Cream

This ice cream is a little bit of heaven in a dish. It only takes 3 ingredients to make and it’s even vegan! The coconut milk makes it so creamy, I might have a hard time going back to regular ice cream. In fact, I’m already making lists of ways to adapt this recipe. I think I’ll add some fruit next time and see how it goes. Not that this recipe needs to be adapted. It’s perfect just as it is. Try it and I think you’ll have a problem putting it down. I think Monkey Boy might be addicted and I don’t blame him!

Ingredients

2 {13.5 oz} cans coconut milk {full fat}
1 1/4 cup sugar
1/2 cup unsweetened cocoa powder

Instructions

In a saucepan over medium heat, combine all ingredients and stir. Simmer 6-8 minutes or until slightly thickened. Pour into an air-tight container and refrigerate until cold, about 4 hours. Pour into an ice cream maker according to manufacturer’s directions {I use my KitchenAid Ice Cream Maker Attachment}.

If you have a little coconut in the cupboard, toast a tablespoon or two and sprinkle it on top.

How Long Will Foods Last in the Freezer?

Have you been a busy little squirrel gathering nuts for the winter? I know I have been freezing, canning, and dehydrating like crazy. I love to freeze foods from the garden and Mr. Produce guy, but even with the best practices, they don’t last forever {the taste and texture start to deteriorate a bit}.Here’s a quick reference for how long frozen foods last:

Asparagus – 1 year
Beets – 1 year
Peppers – 3-4 months
Broccoli – 1 year
Carrots – 1 year
Cauliflower – 1 year
Corn – 8 months
Beans – 1 year
Leafy Greens – 8 months
Apples – 4 months
Apricots – 6 months
Bananas – 8 months
Berries – 6 months
Cherries – 6 months
Cranberries – 4 months
Peaches – 4 months
Fruit juice – 1 year
Nuts – 2 years
Butter – 9 months
Bread – 3 months {if you wrap it really well, I think you can get more time that this}
Pesto – 8 months {no cheese} or 3 months {with cheese} {I personally think you can get about 6 months with cheese}

I personally try to use most of what I freeze within a year. These are the “suggested” storage times, what’s your experience? Do foods last longer than this in the freezer or do you follow the guidelines strictly?

Free Peep Show – See Hot Chicks!

Ha ha ha! 😉

Last night the Girl Who Thinks She’s a Bird and I locked Lucy the Puggle Dog in the house and brought the baby chicks on to the lawn to snap some pictures. Poor Lucy, she was hopping up and down trying to get our attention the entire time. 😉

Blue Laced Red Wyandotte #1

This is the first time we have not kept baby chicks in the house or the garage. Instead, this time around we set the chicks up in a stock tank and clipped a heating lamp to a wire rack and then weighted the top down so any wildlife couldn’t get to them.

So far so good, they are thriving, and the HH is happy they are outside.

Blue Laced Red Wyandotte #2

I’m not sure if there is a mean girls club beginning to form but 6 of the chicks like to hang out together while the other 2 seem to stay at the opposite end of the brooder.

Araucana #1

I think we have another glamour girl on our hands. Aren’t her eyes pretty?

Araucana #2

We originally names this one chippy because she had the coloring of a chipmunk. But we may have to switch her name to possum because if you pick her up {or set her down} all the sudden she gets real stiff and just hunkers down and won’t move. It’s odd.

Buff Orpington

I just noticed little ridges on the top of this chicks comb. It better not be a rooster.

Cuckoo Maran

I LOVE the coloring on this cuckoo maran!!! She looks like a little penguin.

Mottled Java #1

The Girl calls this on Jabba the Hut.

And this one, espresso.

Why? Because as soon as we set her down on the grass she took off running. It took up over 10 minutes to catch her. What a little stinker! I can tell already this baby chick is going to be a little trouble maker.

But man is she cute.

I don’t know about you, but I LOVE baby chicks! I think I might like them more than I like eggs. 😉

P.S. We are still in the process of naming the chicks. {4 are ours and 4 will go to Girly Girls kids once they get a little bigger}. So if you have any suggestions for names, I’d love to hear them.
