Easy Summer Salads – Grilled Corn, Roasted Pepper, and Black Bean Salad

I arrived at the dentist office a little early this morning to get more work done on my crappy British teeth, and while I was there I spied the latest edition of Cooking Light magazine. This recipe for a corn and black bean salad caught my eye, so on the way home I stopped at a local produce stand and picked up some avocados and cilantro and made it for lunch.

Holy Crackers! Are you in for a treat if you make this.

I didn’t have any of the fancy peppers they suggested but I did have a jar of roasted peppers in the pantry and this salad turned out great. Try it. You’ll fall in love with it. I promise.

Ingredients
2 ears shucked corn, grilled
6 tablespoons extra-virgin olive oil, divided
1 Walla Walla onion, sliced into 4 large slices
1 avocado, peeled, halved, and pitted
1 marinated roasted red pepper, chopped
1/2 cup chopped fresh cilantro
3 tablespoons fresh lime juice
1 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 (15-ounce) can S&W Black beans with jalapeno, rinsed and drained

Directions
Preheat grill to high heat. Using 2 tablespoons of olive oil, coat the corn and onion slices, add salt and pepper and grill them in a grill pan.

Once you remove the corn from the grill, let it cool, then cut the kernels from ears of corn and place them in a large bowl. Chop onion, roasted pepper, and add to the bowl. Add remaining 4 teaspoons olive oil, cilantro, lime juice, cumin, salt, black pepper, and black beans to the bowl and toss well. Cut avocado into thin slices and place on top of salad.

Serves 2 for a main dish or 4 for a side.

Canning 101 – Strawberry Basil Jam Recipe

Oh dear. I think I have found another knock out canning recipe. This time it’s for Strawberry Basil Jam. I loved the strawberry bruchetta the HH made a few weeks ago so much, that when I came across a recipe for strawberry basil jam, I just had to give it a try. And I’m so glad I did. This jam recipe is scrumptious {and it tastes great on homemade pancakes too}.

Hopefully you have some basil in the garden so you can make a batch of this jam soon, trust me, it’s a keeper.

Strawberry Basil Jam Recipe

Ingredients

4 cups fresh , sliced, strawberries,
2 cups Sugar
2 tablespoons lemon juice {I used bottled}
3 tablespoons fresh basil , chopped

Instructions

Bring a boiling-water canner, 3/4 full with water, to simmer. Wash jars and screw bands in hot soapy water; rinse with warm water. Pour boiling water over flat lids in saucepan off the heat. Let stand in hot water until ready to use. Drain well before filling.
Crush strawberries, and measure 4 cups prepared fruit into 6- or 8-qt. sauce pot.
Combined the strawberries, sugar, and lemon juice and bring to a full rolling boil, reduce heat, and stir in basil and cook an additional 3 minutes. Remove from heat and skim off any foam with metal spoon.
Ladle immediately into prepared jars, filling to within 1/4 inch of tops. Wipe jar rims and threads. Cover with two-piece lids. Screw bands tightly. Place jars on elevated rack in canner. Lower rack into canner. {Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.} Cover; bring water to gentle boil. Process 10 min. Remove jars and place upright on towel to cool completely. After jars cool, check seals by pressing middles of lids with finger. If lids spring back, lids are not sealed and refrigeration is necessary.}

Roadside Vegetable Stands – Duris Farms Puyallup, Washington

Over the weekend, The Girl and I were in the Puyallup area. On the way home we were driving down River Road and decided to stop by Duris Farms to see if there was anything we wanted/needed.

We picked up a Granite Ware Dish Pan, thought about buying a 5 gallon bucket of pickles, snapped a few photos, and then headed home.

Part of me wanted to grab a bucket of cucumbers, {we are growing only slicing cucumbers this summer} but over the past few months I have been able to pick up so many free jars of pickles from couponing, it seems totally silly to can pickles the year, simply because I don’t think we could eat them all.

But I love Duris Farms, okay, so maybe I love roadside fruit and vegetable stands in general, but there is just something a wee bit magical about a place that only opens for a few months each year.

It kind of makes you feel like you are visiting an old friend, like Ike Godsey or something.

But without his meddling wife Cora Beth {she was a pill, wasn’t she}?

Ahhh summer. Heat waves, dirt roads, and sticky, sweet samples of fresh fruit sold alongside the roadway, I love it!

The Walton’s were the best family on the Planet, no doubt about it. And guess what? Amazon sells all 9 seasons on dvd. Now I have no idea what the producers were thinking when they tried to replace John Boy towards the end of the show’s run, I mean come on, just because John Boy woke up from amnesia and didn’t know who he was, didn’t mean WE didn’t know there was an impostor laying in that hospital bed. Oh well. I still love it. And I’m nerd enough to say we own all 9 seasons.
