We came home from vacation last week to find ourselves knee deep in beans, zucchinis and cherry tomatoes, so we didn’t actually need to many groceries.

But I’m pretty excited about the Albertsons Round Up on the horizon, I already placed an order for 2 things, and now I’m just waiting to get the ad in my hand to see what else will be a killer deal. We’ll see.

Here is what I picked up this week.

The Albertsons Double Coupon Report – What Did Mavis Buy?

If you are an Albertsons Double Coupon Shopper, you may be interested in the shopping trip I did this morning.

And hey, even if you’re not an Albertsons shopper, you still might want to take a look to see how I saved a bunch on groceries today. All those funny little coupons sure do add up when you combined them with a good sale.

I was patiently waiting my turn in the check out line this morning as a lady with a huge order was finishing up. I noticed she was buying several cases of yogurt and quietly asked her what she was going to do with all of it. She was like, Well, I have a bunch of coupons and I am getting the yogurt for $1 per 4-pack, and then a FREE milk catalina is going to pop out. So I’ll be getting 3 packs of yogurt and a gallon of milk for like 3 bucks. Not bad ehh?

But then, something happened.

The free milk catalina didn’t spit out.

Yada, yada, yada, she had to get the free milk at the same time she was buying her yogurt. There was no magical catalina and most importantly no 2 week window to use the coupon for milk. She had to take all the milk right then and there.

As she was standing there trying to figure out what the heck to do, I quickly offered her a $10 Starbucks Card I had in my wallet that I scored for free from Swagbucks.

Oh Happy Day.

Talk about being in the right place at the right time.

Easy Summer Recipes – Green Bean Salad

Right now our garden is over flowing with green beans. In the past week we have canned both dilly beans and regular beans to enjoy later this winter. So what are we doing with the fresh ones? Well, for starters, last night I made a delicious green bean salad. Not only is this great as a side dish for dinner, but it would also be a great salad to bring along on a picnic or to a potluck.

My family really enjoyed it, and I think yours will too.

Ingredients

1 pound fresh green beans, trimmed and blanched
1 small sweet onion, sliced
4 oz cherry tomatoes
3 tablespoons olive oil
2 tablespoons white wine vinegar
1 teaspoon Dijon mustard
1/4 cup pine nuts, toasted
salt and pepper to taste

Directions

In a large bowl combine the beans, onion and tomatoes. Toss. In a separate bowl mix the olive oil, vinegar and mustard together. Pour over bean salad, add salt and pepper and sprinkle pine nuts over the top. Serve immediately.

Canning 101 – How to Can Dilly Beans

If you have OCD and you’d like to give canning a try, than this is the recipe for you. Not only is it an easy peasy recipe because you are cold packing your vegetables, but for me, being able to line my beans up in the jar was a total rush. I loved every second of it!

Just remember, after canning these bad boys, you won’t be able to eat them for a few weeks. You need to wait a bit and let the flavors develop. But don’t worry, they’re worth the wait. I promise.

Ingredients

3 pounds green beans, trimmed
1 1/2 teaspoon cayenne pepper
6 head of dill
6 cloves garlic
3 3/4 cups white vinegar
3 2/4 cups water
1/3 cup pickling salt

Directions

Fill your boiling water canner 2/3 with water and bring the water to a boil.

Fill 6 washed and sterilized jars, with 1 clove of garlic, 1 head of dill and 1/4 teaspoon cayanne pepper. Then add about 1/2 pound of trimmed beans {until the jar is packed tight}.

In a saucepan, combine the vinegar, water and salt and bring to a boil.

Once the water had been brought to a boil, pour the boiling brine over the beans, making sure to leave 1/4 inch headspace. Make sure all bubbles are removed before adding a lid and band.

Process for 10 minutes in a boiling water bath.

Wait 4-6 weeks before cracking open a jar to allow the flavor to fully develop.
