I went out to water the garden this morning and noticed not one, but two giant zucchinis growing in the squash bed. Holy cannoli’s, when these things decided to take off it’s crazy.

And the tomatoes? We are officially in business! With a little luck we won’t have to buy any at the grocery store for quite a while. Homemade tomato sauce and salsa here I come!

Poor Lucy the Puggle Dog. She has been vomiting non stop since I got home on Sunday night. 🙁 The HH thinks she ate some sort of dead animal or something from the woods. Eeek! She is drinking water, but doesn’t want to eat and pretty much just wants to lay around all day.

I’m going to call the vet this morning to see if she recommends I bring her in. Poor thing.

Spinach Salad w/ Bacon Dijon Dressing

I totally had to try this spinach salad after reading the ingredients: it’s served with a warm bacon dressing. Warm. Bacon. Dressing. People! Of course I would make this and of course it rocked my socks off. So if you’re searching for that perfect dish to serve at your next BBQ, this is one your family and your guests will be talking about for days.

Ingredients

6 hard-boiled eggs, sliced
1 pound bacon, cooked and roughly chopped {reserve 2 tablespoons grease}
5-6 cups {about one 10 oz bag} fresh baby spinach
1 small red onion, {half chopped and half thinly sliced, divided}
1/2 cup white wine or balsamic vinegar
1/2 cup white sugar
2 teaspoons Dijon mustard
1/4 cup water

Directions

Layer spinach, sliced onion, eggs and bacon in large bowl and set aside.

In the same skillet you cooked your bacon in, heat reserved grease. Sauté the chopped onion for about five minutes, or until tender. Pour the white balsamic vinegar into the pan and scrape bottom to lift any bacon bits off bottom. Add sugar, mustard and water, and stir until well combined. Pour over salad and serve. Enjoy.

DIY First Aid Kit for College Students

Since I won’t be there to kiss any boo-boos when my daughter leaves to college this fall, I thought I would put together a little first aid kit for her. Okay, I admit, I haven’t kissed any boo-boos since she was 3, but still, nostalgia is really causing me to write some weird things these days. I settled on a cheap, clear tote with a lid {the size of a shoe box}. It will be easy to stash at the bottom of her closet or under the bed and will keep things from getting crushed.

If you have a recent grad and want to send them off to college prepared, here’s a quick list {some are duplicate problem solvers, it just depends on your preference} on putting together your own first aid kit:

Band-aids
Antibiotic ointment
Advil
Gas X {dorm food makes this one essential}
Benadryl
Milk of magnesia
Thermometer
Instant ice pack
Pepto
Throat lozenges
Cold medicine
Q-Tips
Nail clippers
Hydrogen Peroxide
An ace bandage
Cotton balls
Small pair scissors
Small pair of tweezers

I figure, anything requiring more than that probably means a trip to the campus health facility.
