The Girl and I are having an absolute blast working our way through Shalane Flanagan’s cookbook Run Fast Eat Slow and eating all the results in the process. We haven’t made a recipe yet we didn’t like. We whipped up a batch of her date power bites a few weeks ago and let me tell you Bob, they didn’t disappoint.
So if you’re looking for something delicious to tide you over until dinnertime, or a quick snack on the go, these date power bites are perfect to pop in your mouth. We loved them. I hope you do too.
Ingredients:
12 large dates
1 cup dried cranberries
1 cup raw chopped walnuts
1/4 cup unsalted peanut butter
1 tablespoon unsweetened cocoa powder
2 tablespoons finely ground coffee beans
1/4 teaspoon sea salt
1/2 cup shredded unsweetened dried coconut
Directions:
In a food processor or blender, blend together the dates, cranberries, walnuts, peanut butter, cocoa powder, coffee, and sea salt. Pulse a couple times to blend the ingredients and then blend for 1 to 2 minutes until everything is finely ground. Blend until the ingredients clump together.
Empty contents into a small bowl and using your hands, shape the mixture into tablespoon sized balls. Roll the date balls in unsweetened coconut and then store in an airtight container for up to 1 month or pop them in the freezer for up to 6 months.

Want to know a secret? My mom saves me all of her takeout and deli containers for me to reuse for the HH’s lunches. I love it because I’m recycling; he loves it because he can toss and go without worrying about remembering to cart a lunchbox home {plus, fewer dishes!!}. So that got me to thinking? What are some other “disposable” items I can reuse? Turns out, there are a lot!
Ziploc baggies: I reuse these over and over if they don’t have any liquid or sticky stuff in them. If I’m storing crackers or something dry, a quick wash and dry and they are good as new!
Glass jars: Peel the paper off, wash with soap and water and you have yourself a nice sturdy container.
Paper grocery bags: Gone are the days of using them to cover text books, but I save them and decorate them as wrapping paper.
Butter wrappers: I’m a fan of

You know what one of the hardest things on the planet is? Narrowing down your list of favorite things about your very favorite thing! I could fill post after post about my favorite gardening tools and supplies and, oh wait, I totally already do that! So trying to narrow that list down and cram it in one post is so dang hard.
